Easy Miso Soup
Miso is a fermented soy and can be great to add to your diet if you tolerate soy. You can find it in the Asian food section or in the refrigerated section with the other fermented foods like sauerkraut, pickles, and tempeh.
- 4 cups water
- 2 cups bok choy, roughly chopped
- 3 scallions, chopped
- 4 tablespoons miso (any kind)
- 2 tablespoons chives
- PREPARE THE SOUP. Add water, bok choy and scallions to a soup pot. Cover and bring the soup to a boil. When the soup is boiling, remove from heat. Add miso and mix until it’s dissolved. Top with chives and serve.
