This is the simplest Gauc but for some reason I always get a lot of compliments on it. I think the key is a lot of lime zest and juice. That also helps the guacamole for oxidizing aka turning brown.

  • 3-4 large ripe avocados
  • 3 limes
  • 1 red onion, finely chopped (optional)
  • 1 bunch of cilantro, chopped
  • salt and pepper to taste
  1. Slice open all the avocados and scoop out flesh into a bowl. Zest 1 lime and juice all 3 limes and add to bowl. Add the onion, cilantro and salt and pepper. With a small knife, slice through the avocados and start working them into bits. Finally, stir with a spoon to make sure everything is combined. I like to leave it a little chunky. Taste for salt and pepper and serve.
